Introduction

I have a ton of tomatoes and I found this recipe from How Sweet it Is. I modified it due to ingredients I had, but let me tell you it tasted so good! Ingredients

    2.5 Large Tomatoes - sliced 1/4" thick
    1/2 cup of Panko Bread Crumbs
    1 tsp of minced garlic
    1/2 tbsp of parsley
    4 tsp. of Parmesan Cheese

Directions

Heat grill to medium heat.

Spray an Aluminum foil pack or pan with cooking spray. Add,Sliced tomatoes and season with salt & pepper.

In a small bowl, mix the remaining ingredients bread crumbs, garlic, parsley and cheese). Sprinkle over tomatoes making a tiny mound.

Turn grill down to low.

Place tomatoes on grill and cook until bread crumbs turn brown. Becareful it happens fast!

Serving Size: 3 large slices of tomato each
