Number of Servings: 5

Ingredients

    one whole chicken 4-5 lbs.
    fresh rosemary
    basil
    oregano
    cracked peppercorn
    thyme
    dill weed

Directions

Leave skin on and season outside of chicken on all sides with everything except the fresh rosemary.

Liberally season the inside of the chicken cavity with everything and the fresh rosemary.

Bake the chicken on the top rack, uncovered with breast side up, at 425 degrees for about 1 hour and 20 minutes to produce a very juicy bird with a crispy skin

*tweak cook time depending on the size of the bird (a 4.5 lb bird took me 1 hr. 20 min)

    PLEASE TRY THIS INSTEAD. Skin the chicken to get rid of a LOT of fat. Roast it upside-down to keep juices in the breast meat. VERY nice! - 5/27/09

    I make a whole chicken in my crockpot. I sprinkle with Italian seasoning and cook all day. It stays very moist and out of this world in taste! I always pull off the skin after cooking and discard. Makes great leftovers. Pull the meat off the bones and put in bowl with juice from crockpot. Yummy!!! - 6/16/09

    Great flavor, husband loved it. Def. make again I added a whole lemon sliced in half and put in cavity. Also added garlic under skin & in cavity. Directions could be clearer: after 30 min the skin was very brown had to cover with foil & add water to pan, took longer than 1hr 20min for my 4.5lb bird - 8/28/08

    This was amazing. I did use a few of the suggested comments (halved lemon and garlic clove slice placed inside, placed the bird upside down, covered in foil until the last 20 minutes). Thank you for sharing such a wonderfully easy and delicious recipe. - 3/17/12

    Chicken is in the oven. I pulled the skin off and rubbed it down with 1 tsp of olive oil. Then used the spices as recommended with 1 clove of garlic minced mixed in the spice rub. I placed garlic cloves and fresh rosemary in the cavity. Hopefully it is good. (used fresh basil) - 4/3/10

    This is very good and you can alter the spices without affecting the calories. I added minced garlic b/c my family loves garlic. It smells so good in the oven that we just can't wait to eat. Also we had a lot of leftovers for an easy meal the next night! - 7/14/08

    This was a great recipe! The only reason I do not give it 5 stars is because the instructions where vague, I did need to add water to the bottom of the pan and cover with foil for most of the cook time. - 7/21/11

    We used a 7 lb roasting chicken. The directions on the package say to cook for 20 min per pound of chicken, 25 min if it's stuffed. Tasted good, but I had a hard time seasoning under the skin of the legs. This was my 1st time cooking a whole bird by myself. - 2/23/11

    I cooked it in the microwave according to my microwave's instruction for min/lb for chicken. Added a dash of paprika on skin to crisp it. Also, placed in on a microwave roasting tray in the pan. Very Delicious - 5/21/08

    I must be doing something wrong in calculations. I copied this exact recipe and for the same amount of servings and I came up with 577 calories and between 7 and 9 grams of fat for each serving. Why do my recipes come up with more calories and fat content - what am I doing wrong? - 11/19/10

    Recipe is good. This is a printed recipe and not a video. I copy and save recipes so I can keep them forever. Also, there is another important reason to offer both video and printed versions. When I play your video recipes, the video keeps halting and it takes too long.

    After seeing the reviews (skin got too browned) and the baking instructions I had to look up a baking chart. It said to preheat the oven to 450 put the chicken in and bake for 10-15 min. Then turn it down to 350 and bake 20 min. per pound. I cooked my 6# bird for 2 hrs. after I did 15 min. at 450. - 5/24/18
