Ingredients

one whole chicken 4-5 lbs.
fresh rosemary
basil
oregano
cracked peppercorn
thyme
dill weed
Directions
Leave skin on and season outside of chicken on all sides with everything except the fresh rosemary.
Liberally season the inside of the chicken cavity with everything and the fresh rosemary.
Bake the chicken on the top rack, uncovered with breast side up, at 425 degrees for about 1 hour and 20 minutes to produce a very juicy bird with a crispy skin
*tweak cook time depending on the size of the bird (a 4.5 lb bird took me 1 hr. 20 min)

I make a whole chicken in my crockpot. I sprinkle with Italian seasoning and cook all day. It stays very moist and out of this world in taste! I always pull off the skin after cooking and discard. Makes great leftovers. Pull the meat off the bones and put in bowl with juice from crockpot. Yummy!!! - 6/16/09

Great flavor, husband loved it. Def. make again I added a whole lemon sliced in half and put in cavity. Also added garlic under skin & in cavity. Directions could be clearer: after 30 min the skin was very brown had to cover with foil & add water to pan, took longer than 1hr 20min for my 4.5lb bird - 8/28/08

After seeing the reviews (skin got too browned) and the baking instructions I had to look up a baking chart. It said to preheat the oven to 450 put the chicken in and bake for 10-15 min. Then turn it down to 350 and bake 20 min. per pound. I cooked my 6# bird for 2 hrs. after I did 15 min. at 450. - 5/24/18
