Ingredients

    1 Tbsp Canola Oil
    1 C Onion, chopped
    2 tsp Gingerroot, grated
    1 Clove Garlic
    3 C Water
    10 oz. Chicken Broth
    1/2 C Carrot, grated
    2 tsp Beef Bouillon Powder
    5 oz. Beef Tenderloin
    1/2 C Bean Sprouts
    2 Green Onions
    3 Tbsp Fish Sauce
    1 Tbsp Lime Juice
    1 - 8oz. Package Rice Noodles
    Cilantro

Directions

Heat cooking oil in large saucepan on medium-high. Add onion. Cook, uncovered, for 5-10 minutes, stirring often, until softened.

Add next 4 ingredients. Heat and stir for 1 to 2 minutes until fragrant.

Add next 5 ingredients. Stir. Bring to a boil. Reduce heat to medium-low. Simmer, covered, for 10 minutes.

Add next 5 ingredients. Stir. Bring to a boil on medium-low. Turn off heat. Let stand, covered, until beef is cooked to desired doneness. Makes about 7 cups.

Cover rice noodles with boiling water in large heatproof bowl. Let stand for about 3 minutes until softened. Drain. Divide noodles among 6 large soup bowls. Ladle soup over top.

Garnish individual servings with basil.

    Awesome recipe. I would recommend using Fresh Rice Stick Noodle rather than the Dried ones. Its called Banh Pho made by Sincere Orient Food Co. Taste much better and you don't need more than 10 seconds boiling the noodles. - 11/22/09

    Nice, simple, tasty recipe. I made mine with chicken and ate it with fresh sprouts, cilantro and basil with just a splash of siracha for heat. Perfect!! - 10/27/09

    I tried this recipe today...I only put in one tbsp of of the fish sauce (that was just way too much salt for me). I really liked the taste of the soup without the fish sauce. So I think the next time I make it I'll omit that. I added mushrooms and snow peas..It was pretty good.Thanks for the recipe - 3/14/10
