Introduction

2 ingredients, tasty and easy.
To cut the calories instead of using regular size cupcake pans - use the mini's- which you can get - 45 mini's - which of course would be 1/3 a serving each.

Ingredients

    One box Duncan Hines Deluxe Spice Cake Mix
    One Can Libby's Canned pumpkin - the 15 oz size.

Directions

Mix the pumpkin into the spice cake mix, making sure to incorporate ALL of the powder.
Using Pam - spray cup cake tins - enough for 15 and evenly divide the batter.
Or use 4 mini muffin pans of 12 mini muffins.

Bake 350 for about half an hour. - Till they spring back when touched lightly.

Good as is - or I was also experimenting with Dark Chocolate Almond Butter - that was tasty on top.

    I really liked these. I had seen a similiar recipe on pinterest. I would be intrested to try it with vanilla or yellow cake mix. They were very easy to make - I did top with cream cheese frosting. - 11/3/11

    If you like chocolate try Chef Meg's dark chocolate frosting as seen in the new cookbook - GOOD!

    I'm so glad you liked them - I've also added chopped walnuts too - good omega 3 fatty acids - for some variety.

    I made in regular size tin and ended up with 24 of them. Very yummy even kids liked them. I used yellow cake mix and added 1 tsp cinnamon - 9/17/13

    So good! I topped with a mixture of fat free cool whip and sugar free cheesecake flavored Jello and skim milk then sprinkled with a little pumkin pie spice for color. Amazing! - 11/13/11
