Ingredients

    3 cups cooked chicken or turkey, chopped
    1/2 cup green pepper, chopped
    1/4 cup onion, chopped
    1/2 cup celery, chopped
    1 jar (2 oz.) pimento (or chopped red bell pepper)
    1 can (4 oz.) mushrooms pieces, drained
    2 cans (10 oz.) cream of chicken soup (or cream of mushroom)
    1 pkg. (10 oz.) frozen peas

Directions

Combine all ingredients except frozen peas in Crock Pot. Stir to mix well. Cover and cook on low for 6-7 hours. One hour before serving, turn to high and add peas.

    Excellent recipe. I don't eat fungus so omitted the mushrooms and used low fat/low sodium cream of chicken. Didn't have green pepper on hand, but used fresh diced red pepper. Froze the leftovers in freezer bags. Easy Peasy! - 12/2/09
