Introduction

Removing the chicken fat and skin and adding no salt to the tasty sauce makes this chicken favorite heart-healthy. Removing the chicken fat and skin and adding no salt to the tasty sauce makes this chicken favorite heart-healthy.

Ingredients

    • 3 lb. chicken parts (breast, drumstick, and thigh), skin and fat removed
    • 1 large onion, thinly sliced
    • 3 tablespoon vinegar
    • 3 tablespoon Worcestershire sauce
    • 2 tablespoon brown sugar
    • black pepper to taste
    • 1 tablespoon hot pepper flakes
    • 1 tablespoon chili powder
    • 1 cup chicken stock or broth, skim fat from top

Directions

1. Place chicken in a 13x9x2" pan. Arrange onions over the top.



2. Mix together vinegar, Worcestershire sauce, brown sugar, pepper, hot pepper flakes, chili powder, and stock.



3. Pour over the chicken and bake at 350º F for 1 hour or until done.



4. Baste occasionally.



Yield: 8 servings--Serving Size: One chicken part with sauce

    Good, but I prefer a 'sauce' that sticks to the meat and not a liquid. Maybe I will try tomato paste next time and add a bit of garlic. - 4/23/09

    I used boneless chicken breasts without the skin. The sauce added a nice bbq flavor and kept the meat moist. Even Texas bbqing husband gave this one a thumbs up. - 5/10/09

    I made this for supper tonight and it was very good. I used boneless, skinless chicken breast and used Dr. Pepper instead of chicken broth. My husband and I both liked it. I like the fact it wasn't a sauce but more of a marinade. - 5/18/09

    This was good but I used chicken wings (which came out GREAT) and chicken tenderloins (which came out dry). I am one who likes the thick bbq sauce but this was good too. - 4/6/09

    This was delicious and moist. The whole family enjoyed although my daugher found it a little too spicy for her liking. My son doesn't care for real bbq sauce that sticks to the meat, so this thin liquid was perfect to season the meat, yet leave the chicken with no sticky sauce. - 4/6/09

    Loved it! I left out the pepper flakes ( I was out) so I used paprika instead. I got my chicken on sale and only used thighs. Nice change from breast meat. - 3/1/09

    Made this recipe last night. Good flavor, easy to make. However, the barbeque part was disappointing as there was no true "sauce" to it, only liquid. I think i will try it next time with half the pepper flakes and maybe a can of tomatoe paste like some have suggested. - 2/23/09

    I've made this several times with skinless, boneless thighs and it's very good! I cut back on the red pepper flakes for the kids though. Tasty! Plus I bakes potatoes or sweet potatoes in the oven with them and all you need is a nice salad and you have dinner. - 2/19/09

    This was good and will be fixed again. I did not include the hot pepper flakes to keep it from being too hot for a toddler. I added 1 tbsp honey and that made a great sweet and spicy chicken. Next time I am going to saute the onion before placing it with the chicken. - 4/4/08

    Our family LOVED this recipe. I thickened the sauce after the hour cooking and then put the cooked chicken on the grill over coals and coated them with the barbecue sauce until it caramelized. It was outstanding. - 3/13/08

    This was amazing!! I was afraid it would be too spicy, but since we like spicy stuff, I left the spices as posted and I am SO glad I did!! Perfect spice for my family.     This dish was very moist and tender. The spices were great and the onions gave it great flavor. I'm not an onion lover but this dish was really great! I did reduce the hot pepper flakes to 1 tsp. as my daughter doesn't like things too spicy. - 2/20/08

    I tasted the spicy side of the recipe but the barbecued part I didnt get. It had a nice overall taste but I was dissapointed that the sauce was really watery and not thick. I would probably cut the wet ingredients (broth)in half next time and add some tomato paste to thicken it up. - 2/19/08

    My daughter and I liked this very much. My husband and another daughter didn't like it very much, but I made it with chicken breast, and neither are fond of chicken breast. Next time, I would cut the amount of red pepper flakes and I wish the juice had thickened to make a more traditional BBQ sauce. - 2/19/08

    Yummy, didn't like how watery it was though. Perhaps some tomatoe paste would thicken it a little bit. But very good nonetheless. I only used 1/2 the amount of chili pepper flakes. I love spicy food and was very glad I had not used the full amount at this was more than hot enough! - 2/19/08

    This was a surprise as to how good it is. I really love my homemade really bad for you BBQ sauce, but for a lighter version this is great. I did cut back on the spice and seasoned the chicken with a little Tastefully Simple Garlic Garlic and some of their Seasoning Salt, also a dusting of paprika - 2/19/08

    This was very good and easy to make. I'm cooking for one, so I converted all the Tablespoons to teaspoons, cut the liquid in half and cooked it with two chicken breasts. After reading all the posts about it being too hot, I cut the red pepper in half, and it was fine and barely hot. - 8/24/07

    Warning to the weak, this is very spicy, but still awesome! After cooking this I deboned the chicken and it really became soup with all the leftover liquid, so I served it in a soup bowl and topped it with a dollop of light sour cream to cut the spice and it was magnificent! - 8/22/07

    This was wonderful! I have made this 4 times in the last 2 months! I did try to double the recipe one time and do not recommend doubling those spices! Way too hot!     Really nice very watery tho. I would recommend for next time to crush a chicken stock cube in a small bit if water and mix to the rest will still be thin but will marinate better to the chicken. I used boneless skinless thighs. Will make again even my son loved it - 7/3/17

    I made this tonight and I used apple cidar vingar and I also use a tbsp of cornstarch stir in because I like my sauce a little thicker. I made brown rice and stir fry green beans to go with it. I really enjoy the meal. It all came out to be less then 400 for the whole meal.
