Introduction

Number of Servings: 4

Ingredients

    3 cups cold cooked brown rice
    1 cup frozen peas
    1 cup frozen corn
    1 cup frozen broccoli cut up
    1 tbsp sesame oil
    1 tsp peanut oil
    1 egg, scrambled

Directions

4 servings, about 1 cup each

Heat a wok or pan over medium high heat. Add the oils and heat. Add the frozen veggies and stir fry them until the broccoli turns green and tender. Add the rice, crumbling it as you add it so it doesn't all stick together. Stir fry everything until the rice is warm. Make a small circle in the bottom center of the pan and add the egg. Let the egg cook for a minute and then scramble it into the rest of the mixture.

I also added some black bean and garlic sauce that I had (added it after the rice was mixed in). You could add some soy sauce, hot sauce, whatever you have. You could also use some leftover chicken, pork, beef, or tofu.

    Very Good
    I added a Tablespoon of lite soy sauce. I didn't have corn, peas and broccoli on hand. I did have mixed veggies and broccoli, cauliflower mixture. My husband enjoyed it so much he ate the kids. My sons didn't like it at all. - 1/15/11
