Ingredients

    3 cups diced tomato (canned or fresh)
    3/4 cup finely diced onion (I like to mix white and red onion for a better flavor)
    1 jalapeno (or serano) pepper, seeded and finely diced
    1/4 cup fresh cilantro
    2 garlic cloves, diced
    juice from 1/2 a lime
    1/2 tsp salt

Directions

Combine all ingredients in a medium bowl.
Cover and let sit in the fridge for at least 12 hours before serving to allow the flavors to meld.
Serve with tortilla chips or as a topping for fajitas, tacos, and quesadillas.
Makes approximately 8 servings.

    I made 2 batches of this for a wedding shower, one with the jalepeno (but with seeds intact), and a milder one with an Anaheim pepper. I also doubled the lime juice amounts in each to add a bit of a twist. Absolutely delicious. Thanks for sharing! - 3/1/09

    Yummy!! I made this with the jalapeno peppers and added a dash of cumin. Delicious with scrambled eggs!! I used canned tomatoes this time but I'm really looking forward to using my home grown tomatoes in the recipe this summer! - 3/23/09

    Oh my goodness:)
    I do not like store bought salsa, but this was great:)
    So easy to make:)
    I brought it to a Mexican themed dinner party and it was a hit:)
    I had a lot left over, so maybe next time, I will cut the recipe in half, that is the only thing I would do differently.

    something I like to do with salsa is heat it up on the stove with a can of black beans, add some cumin, chili powder, and cayenne (I like spicy), then pour it on top of grilled chicken and sprinkle with just a little low fat chedder cheese. I will definitely try this salsa recipe next time I make it - 8/6/09
