Introduction

Ingredients

    Citrus vinaigrette:
    • 2 tablespoons fresh orange juice
    • 2 tablespoons red wine vinegar
    • 2 teaspoons olive oil
    • 2 teaspoons honey
    • 1 1/4 teaspoons Dijon-style mustard
    Salad:
    • 4 small skinless, boneless chicken breast halves (12 ounces)
    • 4 cups torn mixed salad greens
    • 2 medium oranges, peeled and sectioned
    • 8-12 strawberries

Directions

1. To make the vinaigrette: In a small bowl combine the orange juice, vinegar, oil, honey, and mustard. Set aside.



2. To make the salad: Place the chicken on a grill rack over medium-hot coals. Grill, uncovered for 6 minutes. Turn the chicken and grill for 6-9 minutes more or until the chicken is tender and no longer pink inside.



3. In a large bowl, toss mixed greens and oranges.



4. Arrange the greens mixture on 4 salad plates. Place a sliced chicken breast on each plate. Drizzle with vinaigrette. Garnish with sliced strawberries.



Serves 4.

    Delicious... Next time I might marinate the chicken in some Lime and Pepper to give it a little extra. The dressing was AMAZING! Even my boyfriend liked it and he's a creamy ranch kinda guy :) - 7/19/12

    I am going grocery shopping and all the ingredients I need happen to be on sale this week so I think I will make this for myself. Too much sugar for hubby but he won't be here so it's perfect for me and if my son won't try it when he gets home from work, he can use the chicken breast on a reg salad - 1/25/12
