Introduction

Ingredients

    • 2 tablespoons olive oil
    • 1 large onion, chopped
    • 1 leek, chopped
    • 1 tablespoon chopped fresh thyme
    • 1 tablespoon paprika
    • 3 Cloves of garlic
    • 1/4 lbs. potatoes, coarsely chopped
    • 14 oz. can black beans
    • 3 1/2 cups low-sodium vegetable stock
    • 6 oz. cabbage or scallions shredded

Directions

1. Heat oil in a large saucepan. Add onion and leek and saute for 3 minutes. Add garlic and paprika and continue to saute for 2 minutes.



2. Add thyme, potatoes, beans, vegetable stock and bring to a boil. Reduce heat, cover and simmer for 10 minutes or until potatoes are cooked through.



3. Add cabbage or scallions and season to taste with salt and pepper.



4. Simmer for 5 minutes.



Serves 6.

    I really liked this. The paprika and garlic made it really warming - great on a winter's day! I'd never have thought of cabbage and black beans together, but it worked perfectly. I used half the oil, and parsley instead of thyme. - 1/1/09

    Once your body is used to digesting fiber, you won't need the Beano. Try it in small amounts first. Cabbage has enzymes in it that facilitate metabolism. When i eat cabbage I lose weight faster than when I don't. I'm always looking for good recipes with cabbage to keep up the weight loss. - 6/7/08

    I made this, and while it was cooking I tasted it. Phooey. Not very good at all. One star. Something was missing. I added some ham base. I had one strip of bacon left and added it, would have put in more if I'd had it. The ham base made all the difference! 5 stars. I split the difference with 3. - 3/15/11

    I just made this, it is really good, I used bagged coleslaw mix, which added in some carrots very yummy. I ate a pretty hearty bowl full, and am annoyed because the nutritional information doesn't say how much is considered a serving, for the 300 calories - 5/20/16

    This was very good. Hubby, son and I love cabbage and black beans and I never though to marry them in a dish before, delish! Rinsing the beans before using will take away them part that causes gas in most people, just a tip for people that have a problem in that area, then bean-o is not needed - 2/2/12

    Sounds good but the nutritional data doesn't say how many it's for, in the box. Is it actually calculated for six? 300 calories sounds like a lot for all of that, in 6 servings. But if it's for all 6 servings, it sounds about right. - 2/3/11

    Cabbage or Scallions? They are two totally different things. I like cabbage but it doesn't sound that great with black beans. However, with scallions (green onions)? That sounds absolutely devine! - 10/31/08

    FEDEXGUY, 2 tablespoons of olive oil for 6 servings only adds about 40 calories. Olive oil is one of the healthy ones, and our body needs a certain amount of fat. The recipe is well within healthy guidelines just the way it is. - 10/31/08
