Introduction

A nice refreshing dessert. A nice refreshing dessert.
Number of Servings: 4

Ingredients

    1 small box orange sugar free gelatin
    1 envelope unflavored gelatin
    1 large can unsweetened pineapple chunks
    1 tsp coconut extract
    1 qt low fat buttermilk
    2 cups grated carrots


Directions

Drain pineapple, sprinkle unflavored gelatin and flavored gelatin over cool juice, heat until dissolved.
Remove from heat, add buttermilk and extract. Stir.
Add pineapple.
Cool in refrigerator until firm.
Just before serving blend in blender until creamy.
Stir in carrots and serve.

    I am wary of "sugar-free" and "low-fat" unless I read the ingredients. If they have sucrolose, aspartame, or high fructose sugar, I avoid them. - 1/6/11

    Is coconut extract kind of like vanilla extract and made from real coconut? Could you possibly use coconut milk in place of some of the buttermilk? Just trying to figure out how I could make this...It sounds really good. - 1/5/09
