Number of Servings: 4

Ingredients

4 (4-ounce) boneless top loin pork chops
    1 tablespoon olive oil
1 medium white or yellow onion, sliced (about 1 cup)
2 cups sliced mushrooms, (about 8 ounces)
    1 tablespoon flour
    1 1/2 cups low-sodium chicken stock
2 teaspoons no salt Italian seasoning blend
    1/4 teaspoon black pepper
1 pound redskin potatoes, quartered (about 8 potatoes)
4 cups fresh green beans, trimmed (about 12 ounces)

Tips

You can change up the herb blend as desired.
Our blend contained dried parsley, oregano, basil, and thyme.

Directions

Place a large skillet over medium-high heat, then coat with cooking spray. Add the pork and cook two minutes per side.

Set the pork chops aside, then return the skillet to the heat. Add the oil, then the onions. Cook for three minutes, stirring occasionally.
Add the mushrooms and cook another two minutes, until the mushrooms are soft and starting to brown.
Stir in the flour and cook for one minute, then slowly pour in the stock.
Stir constantly for three minutes, until the sauce thickens. Add the seasoning blend and pepper, then turn off the heat.

Place the potatoes in the bottom of the slow cooker. Top with the pork, then the onion-mushroom mixture.

Cover and cook on low for five to six hours. About 15 minutes before you're ready to eat, add the green beans. Cook until tender.

Serve immediately.

. 3 ounces cooked meat, 1/2 cup potatoes, and 1 cup green beans.

Why bother with a crockpot when you have to cook everything in a pan first. It doesn't save any time and it sounds like it could be done in that one pot on top of the stove or in the oven. - 5/2/13

This sounds really good, but it would be really nice if you had actual pictures of what you are cooking. I have noticed this quite often with these recipes of the day. - 5/2/13

This recipe makes little sense. Why cook Almost everything. The whole idea is to put the ingredients and leave it.
How come the meal DOES NOT EVEN LOOK LIKE A SLOW COOKER MEAL-NO WAY!!!

I too often wonder why the photos don't match the recipes. It is a bit frustrating. This photo looks like chicken and squash - not pork and red potatoes. - 5/2/13

For everyone asking why cook everything first, searing the pork before putting it in the slow cooker helps to retain its moisture and flavor, sauteeing the onions would help to caramelize them. As for the mushrooms and green beans, I think they'd be fine without precooking them. - 9/6/14

I can no figure why a recipe so high in fat and calories makes a posting here. As a WW member this calculates to 11 points. WAY more than I would spend on one meal. Sorry, try again! - 5/2/13

I made this dish for dinner tonight. It was good both my husband and I enjoyed it. There is enough left for lunch tomorrow or another time. I did use my own seasoning I did not have the other. - 1/23/14

I'm just curious (not trying to nitpick) but wouldn't all your stuff be like, casserole formed in gravy? or is there not enough of the mixture to soak everything. I only as as I have VERY picky eaters who don't like their foods touching. You have a picture of three very different items so I'm ?? - 5/2/13

My 25 year old son is our family food critic and told me this was â€Å"not a keeper.” I do agree that extra seasoning would have pumped up the taste but it was easy to make and filling. - 3/2/20

This sounds like it would be good but I can't see having to pre-cook so much for a slow cooker recipe. May as well just fix it in the skillet. I may try it that way instead. - 1/2/20

very good taste but I just put it all in crockpot and cook all day on low. Maybe looks better by browning first but it was still good. They must have changed picture as looks like recipe to me - 12/14/19

I make this at least once a month, but as others have said why use the slower cooker, I slice my potatoes thin, once Everthing has been sauteed I put the sliced taters on the bottom add the rest, I add slice apples some times ..cook till the taters are soft.. - 2/20/18

Delicious! Searing the chops really makes them hold their juice and cooking the mushrooms first keeps the sauce from being watery. Adding the stock slowly to the mixture before you put it in the crockpot keeps it from separating. The crockpot makes the pork tender.Thank you for sharing! - 12/29/17

I've modified this a bit by adding a 1/4 cup of white wine. My husband, who "doesn't like slow-cooker food," wants this every week! Apparently, the way he looks at it, there is no other way to cook pork chops! - 8/6/16

This was ok, kind of bland with a little kick. It smelled really good when it went into the crockpot...i won't make this again - the chops were too dry for our taste. Maybe this would be better as a stovetop meal. - 1/21/16

I prefer slow-cooker recipes that the ingredients are just added in together rather than precooking everything the taste was okay. - 6/26/15

Making this as I type this. I'm wondering what the other commenters would use to cook a pork chop in two minutes.... Perhaps I need to add a blow torch to my kitchen gadget collection ;)
