Healthy Flapjacks Healthy Flapjacks
Number of Servings: 4

Ingredients

    1 1/2 cups whole wheat flour
    1 tsp baking powder
    3/4 cup applesauce
    1 cup 2% milk
    1/4 cup egg substitute (or 2 egg whites)
    1 tsp vanilla extract
    1/2 tsp ground cinnamon

Directions

makes eight 4" pancakes (serving = pancakes)

Mix together flour and baking powder. Stir in remaining ingredients to form a smooth batter.
Spray heated frying pan or griddle with non fat cooking spray and cook pancakes.

    Very Good
    To make these fluffier I added 1/2 tsp of baking powder and 1/2 tsp of salt. I used unsweetened applesauce and nonfat milk, but I fried them in canola oil, so maybe that equals out. Served with a sauce of one pint of blueberries, a bottle of pomogranate juice, and 3 tbsp tapioca. Simmer for 20 min - 7/24/11

    loved these. I nixed the cinnamon, used nonfat milk and added flax. I got 9 big pancakes out of it for 104 calories a pancake. yummy - 1/26/10

    i made these and they were VERY, VERY heavy! What did I do wrong? I even added a little water and still was not enough. I will attempt again though. I really want to find great recipes using whole wheat flour!!! - 11/10/09

    This is the best ww pancake recipe I have tried. It is definately being added to my cook book. It quenched my pancake craving and was filling. I don't think there is anything I would change... - 3/29/09

    These were good. They were very filling, I think next time I might try half wheat flour and half white. I like a more tender pancake. I put blueberries on top that I boil until syrupy. - 1/26/09

    Good texture, very filling. I added cut-up apples and used unsweetened applesauce. Needed a little sugar; even the 1 pack of sweet-n-low that I added wasn't quite enough. That and sugar free syrup.... ya, needs sugar. Will try again. - 8/3/08
