If you prefer portion-controlled desserts, these mini Bailey's cheesecakes are up your alley. They also lend themselves well to any sweet topping. Ingredients

    4 cups chocolate graham cracker crumbs
    4 cups sugar
    1 cup unsalted butter, melted
    4.5 pounds neufchatel cheese, softened
    10 large eggs, at room temperature
    2 tsp vanilla extract
    2 cups Bailey's Irish Cream

Tips



Directions

Use cupcake liners in muffin pans (both the foil and the paper liners together for support).

Preheat oven to 325 degrees.

Stir together cracker crumbs, 1 cup of sugar and melted butter until well blended. Spoon into cupcake tins and press it into a crust.

In a large mixer bowl, beat cream cheese until smooth. Add 3 cups of sugar, beat until smooth. Scrape down the sides of the bowl as needed.

Add eggs, one at a time, making sure to scrape the sides after each addition. Beat well on medium speed until well-mixed and smooth. Beat in vanilla and Bailey's Irish Cream.

Spoon batter over crust in cupcake tins. Bake for 10-12 minutes. The center should have the consistency of set gelatin when done. Remove from oven and cool. When cooled, refrigerate until ready to serve.

    I quartered this recipe, easy peasy and it was a hit with the family. Subbed in some splenda, scaled back the butter some (you don't really need a wet crust). It was a treat, so I didn't sweat it too much. - 3/17/14

    OH MY GOSH! I HAVE MADE THESE AND THEY ARE SO AMAZING. NOT ONE OF MY GUESTS THOUGHT THEY WERE ACTUALLY HEALTHY. BUT THE DIFFERENCE BETWEEN THIS RECIPE AND THE FULL FAT VERSION IS SHOCKING AND THESE ARE JUST AS YUMMY. I GIVE IT 5 STARS! - 3/10/15

    Really people! Halve it, quarter it, etc.. It's just math. Almost every comment had nothing to do with making the recipe. I halved the recipe, enjoyed a few and gave the ones I didn't want away. It was DELISH & I will make again. Much better for me than regular cheesecake as an occasional treat. - 3/21/14

    Why do you post recipes like this on a site that is supposed to encourage healthy food choices and helping people lose weight? It is primarily made up of sugar and fat. This seems like a poisonous temptation to even make for a party or to give away. No way!

    Holy moly people, use common cents. This recipe can be cut into 1/4's, which will make 18.I am a single person and I enjoy getting most of the recipes. If I don't care for one I will just delete it instead of complaining. Thanks Sparkpeople for the recipe. - 3/21/14

    This is a joke right?! I'd like to see the home oven that could hold, and bake 74 cupcakes in 10 minutes!!
    Nine packages of Neufchatel cream cheese..10 eggs...4 cups of sugar...1/2 c Bailey's ...What would this cost to make!?

    I can see this recipe being halved, but unless you are using Egg Beaters this would be hard to quarter. I agree with SCHATZISMOM that 74 are too many to have in the house unless you are having a party. - 3/17/14

    I subbed Irish coffee creamer for the Bailey's and the recipe worked out well. I will definitely make again..and like the idea of making them as gifts. - 3/20/19

    Another recipe full of fat and sugar! It sounds delicous----but a much smaller recipe would be more appropriate for good health and weight management. I expect better from SparkPeople!

    The calorie count does not include any topping, e.g., cherries, strawberries, chocolate sauce, etc, so you should add those calories if you add a topping. Unless you are preparing these for a group, I suggest that you cut the recipe in half or even quarters so you don't have a lot on hand. - 3/10/17
