Ingredients

    2 Tbsp extra virgin olive oil
    1 Tbsp butter
    2 cups minute brown rice (pre-cooked per directions)
    1 medium onion diced
    1/2 c chopped green pepper
    3 cloves garlic minced
    2 tsp tumeric
    1/4 tsp cumin
    1-2 dashes crushed red pepper flakes
    salt & pepper to taste

Directions

Cook rice per instructions on box and set aside.

Put oil into non-stick skillet and melt butter into the oil. Add the peppers and sautee for 2 min. Add the onion and garlic and sautee for another 2-4 minutes (until onions turn translucent). Add seasonings and rice and stir thoroughly. Rice should turn a yellow color (from the tumeric).

Makes 6 servings (approx 1 1/2 cup) You can get 8 (approx 1 cup) servings to lower the calories.

    Very Good
    Flavorful, mild rice dish. I did not have tumeric, and added cilantro and 2 diced Roma tomatoes when the rice was mixed in. I now know I could have used more red pepper flakes (I used a few flakes). It's always easier to add than subtract spices! - 11/8/12
