Number of Servings: 2

Ingredients

    8 oz. scallops
    2 tsp. butter
    2 tsp. flour
    1/3 cup skimmed milk
    1 tbs. Romano cheese, grated
    2 Ritz Cracker crumbs

Directions

Using the microwave, melt butter in small baking dish (pint size). Stir in two teaspoons of flour and add skimmed milk. Whisk smooth. Add Romano cheese, mix thoroughly. Add salt and pepper if desired.

Add scallops to al fredo sauce and stir to cover. Crush two Ritz crackers with a rolling pin. Sprinkle crumbs over top.

Bake in 350 degree oven for 30 minutes.

    My husband and I loved this over whole grain angle hair pasta! I added garlic powder, oregano and parmesean cheese, 1/2 cup steamed broccoli and salad with 1/4 tomato, onion and light ranch dressing for a lovely dinner! 5 star all the way! I added a jello cup for dessert, too! - 11/5/11

    Making it right now. I didn't have the Ritz crackers but I do have rosemary and olive oil Triscuits. I'll serve it with linguine and some Italian veggies. It's great to find small recipes like this because I'm only feeding myself. It smells delicious. - 1/29/13
