Ingredients

    3 ripe bananas, mashed
    2 eggs, beaten
    2/4 cup sugar
    2 cups flour
    1 tsp baking soda

Directions

Mash bananas and mix with eggs. Add sugar, then flour and baking soda. Use cooking spray on a loaf pan, fill with batter, and bake at 350 for 1 hour.

    This was a great recipe. I used splenda instead of sugar, egg beaters, and 1 cup white flour and 1 cup whole wheat flour and it still tasted real good. - 1/10/08

    I only had two ripe bananas so I used them an 1/2 cup of applesauce. It was still very tasty. I also had to reduce the bake time to about 35 minutes which was probably still about 5 minutes too long. - 11/23/07

    Ok so this is really really yummy. I wanted to try and make it even more healthy so I substituted 2 eggs for 2 egg whites and 2 c flour for 1 c whole wheat flour and 2/4 c sugar for 1/2 c. splenda. It was still so yummy and very moist. I baked it at 350 for 35 min. - 10/9/07
