Ingredients

    2 large eggs
    1 tsp Cinnamon
    1 tsp salt
    1 tsp Vanilla Extract
    1 cup Applesauce, unsweetened
    1 cup Raisins
    1/2 cup Brown Sugar
    3 cups Oats
    1.5 cups whole wheat flour
    1 cup Banana, mashed
    1 cup all purpose flour
    1/2 cup canned Pumpkin
    1.5 tsp baking soda
    1/2 cup sugar
    1/2 tsp pumpkin pie spice

Directions

1. Heat oven to 350°F. In large bowl, beat pumpkin, applesauce, banana and sugars. Add eggs and vanilla; beat well. Add combined flour, baking soda, cinnamon, pie spice and salt; mix well. Add oats and raisins; mix well.
2. Drop dough by rounded tablespoonfuls onto greased cookie sheets.
3. Bake 10 to 12 minutes or until light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store tightly covered.

    Awesome! I added in some walnuts which really enhanced the breakfast flavor! My only complaint about the recipe is the set up - the directions were not hard to follow, but the list of ingredients was not in order (just a pet peeve of mine!) - 2/18/09

    We used some home-made apple/pear butter unstead of applesauce and 1/2 cup agave nectar instead of the sugars... my husband and I enjoyed them, kids think they taste a little too healthy but considering we didn't use any sugar that is probably why. Great cookies! We added 1/3 cup of flax meal too! - 10/12/08

    This was good, except I used sweetened applesauce and 2 tbsp of honey instead of white sugar. I still found them a little too sweet, though. I also used dried cranberries instead of raisins, which was awesome! - 7/15/08
