Introduction

Tasty salad with cucumber, tomato, onion, and vinegar. Tasty salad with cucumber, tomato, onion, and vinegar.
Number of Servings: 6

Ingredients

    1 lg. cucumber diced
    1 med-lg. tomato diced
    1 sm-med onion diced
    2 cups water
    5 tbsp. vinegar (or to taste)
    Salt (to taste)
    Black Pepper (to taste)


Directions

Place diced vegetables into bowl. Add vinegar, water, salt, pepper. Mix. Refrigerate to marinate.

Goes great with spaghetti!

About 5-6 servings....but low fat and low cal no matter how many servings!

    This is similar to a recipe my family makes only we don't add water. And we dono't use just any vinegar but TARRAGON vinegar... super good stuff but kinda hard to find. ^_^ Tschus! - 4/2/09

    This is a recipe that has been part of our family get togethers for years....try adding black olives, balsamic vinegar, and use red/purple onions...it's FABULOUS! And the longer they sit in the fridge the better they taste. - 1/19/10

    I fell in Love wit this! I left out the water, I felt the tomatoes and cukes have enough. I used Japanese Cucumbers instead of American, they have less/smaller seeds. (English would be good, too) I used this to top my Spring Mix salad and didn't deed any other dressing. - 6/19/13

    This was a great way to use cucumbers and tomatoes. I agree with other postings, too much water and I only used a cup. I also put some garlic in. I will make it again but with only a couple of tablespoons of water and keep the addition of garlic. - 4/14/09
