Introduction

Ingredients

    1 1/2 cups Great Northern beans, rinsed and drained
    3/4 cup cottage cheese
    2 teaspoons chopped fresh rosemary
    1 teaspoon grated lemon zest
    1 tablespoon lemon juice
    1 garlic clove, chopped
    1/4 teaspoon black pepper
    1/3 cup finely chopped red bell pepper
    4 cups assorted fresh vegetables

Directions

In a food processor, the pulse the beans, cottage cheese, rosemary, lemon zest, lemon juice, garlic and black pepper for 10 to 15 times or until nearly smooth. Transfer the dip to a medium bowl. Stir in the red peppers. Serve the dip with vegetables. *Optional, also try serving with whole pita wedges. **Nutritional Information based on Daisy Brand Low Fat Cottage Cheese.

Serving Size: 8 servings; 5 T (1/4 cup + 1 T) per serving, plus 1/2 cup assorted vegetables
