Ingredients

    1/2 cup organic sugar
    1/4 cup unsweetened cocoa
    2 cups reduced fat milk, divided use
    1 teaspoon gelatin
    1 teaspoon vanilla extract
    Pinch of salt

Directions

In a small pot, combine the sugar and the cocoa powder. Pour 1 3/4 cups of the milk into the pot and whisk until thoroughly combined. Place the mixture on the stove and cook over medium heat, whisking occasionally. Meanwhile, place the gelatin in a small bowl and add the remaining milk. Set aside to soften.

Once the cocoa mixture is hot and the sugar has melted, pour in the remaining milk with the softened gelatin. Whisk until smooth. Remove from the heat and whisk in the vanilla and salt. Pour the mixture into the popsicle molds and freeze for at least 5 hours. The pops will stay good frozen for up to two weeks.

To unmold the popsicles before serving, fill a pot with warm water. Dip the molds into the water, keeping the water just below the fill line of the molds. Hold the molds in the water for 15 seconds. Remove from the water and lift the pops out of their molds. If the pops do not unmold easily, place the molds back into the water for another 10 to 15 seconds, until the pops easily lift out.

    These popsicles were great, my children loved them and said they had extremely good flavor. I did reduce the sugar to 1/4 cup and no one noticed. :) - 7/10/14

    I don't think using Silk or any other non-dairy milk to make these Popsicles would be an issue or would effect the texture/flavor. I say go for it and let me know how it turns out!

    You're freezing it. I'm sure you can make do without the gelatin. So many companies try to sneak that in, I don't see why people have to do that on purpose at home, for frozen treats, no less! - 8/19/17

    stationed overseas sometimes we would get the small packages of UHT chocolate milk in our mid-watch box rations (MID-RATS). Normally saved them to freeze and they tasted just like fudgesicles. Will give this a try, thanks! - 1/7/21

    Recipe sounds interesting but why do you need to add salt? Salt is added to to many foods as it is. I don't think it is necessary in this recipe. Most of us consume too much salt as it is.
