Ingredients

    1/2 cup fresh orange juice plus 1 tsp zest
    1/4 cup fresh lime juice plus 1 tsp zest
    2 tbsp honey
    1 tsp ground black pepper
    1 tsp kosher salt
    1 small jicama (1 cup) cut into matchstick pieces
    4 cups watermelon in 2 inch chunks
    1/3 cup roughly torn mint leaves

Directions

Whisk together juices, honey, pepper and salt in a large bowl. Add jicama, watermelon and mint. Toss to coat.

    Very good and refreshing. I have made it without dressing too-just added torn mint and it is sweet as it is with melon being so good right now.

    I cannot wait to make this version of Watermellon Salad. We traditionally us the mint, and mellon, but instead of Jicama, we add Feta and balsamic vinegar and olive oil.
    Jicama is said to contain cancer fighting properties.
