Introduction

I love egg salad, so I decided I would make one lower in fat & Cholosteral I love egg salad, so I decided I would make one lower in fat & Cholosteral
Number of Servings: 6

Ingredients

    2 whole hard boiled eggs
    4 hard boiled egg whites
    1 medium stalk celery finely chopped
    1 tbsp shallots
    2 tbsp lite mayonnaise
    dash salt
    dash pepper

Directions

Hard boile 6 large eggs (see tip), cool to be able to handle. chop 2 whole eggs. Remove yolks from other 4 hard boiled eggs. Dispose of yolks.
Dice small shallot and medium stalk of celery fine.
Add mayonnaise and stir together with fork until well mixed.

TIPS: To make "perfect" hard boiled eggs, put them in pan large enough so they are in a single layer. cover so there's about 1 " of cold water covering the eggs. Put on stove and bring water to a boil. As soon as the water boils turn off the heat, and let the eggs sit for 10 minutes. Pour out most of hot water and cool eggs further with cold water. Let sit until cool. Done this way eggs will come out with the yolks centered and no grey coloring around the yolks.

Makes approximately 3 cups of salad. Serving is 1/2 cup. Great on Pita Bread!

    I like Egg Salad Sandwiches but could never find a good recipe until now. However, I used half Mayo and half Miracle Whip (lights) and yellow mustard. Good recipe. - 4/16/09

    Very tasty - however, I added a bit of pickle relish (dill and sweet) for added flavor and used a no-salt seasoning blend in place of salt and pepper. - 10/19/09

    I love the addition of celery and onion the only thing I thought was it was a bit dry so I added 1 T of fat free sour cream along with about 2 tsp yellow mustard and a dash of paprika. I also noticed it did not make 3 cups worth mine measured a little over a cup DELICIOUS though - 8/26/08
