Introduction

This delicious blend of maple syrup, sugar and cinnamon add a warm, homey taste to plain mashed sweet potatoes! This delicious blend of maple syrup, sugar and cinnamon add a warm, homey taste to plain mashed sweet potatoes!

Ingredients

    3 small to medium sweet potatoes
    1 tbsp. reduced calorie maple syrup
    1 tbsp. reduced calorie butter spread, melted
    1.5 tbsp. Splenda Btroown Sugar blend
    1 tbsp. fat free half and half (optional)
    1 tsp. ground cinnamon

Directions

Place sweet potatoes on baking sheet and bake at 350 degrees for 30-40 minutes, or until skin is shriveled. In a small bowl, combine syrup, melted butter spread, cinnamon and sugar. When potatoes are cool to handle, scoop the insides into a bowl (mash with the skin for extra fiber). Add syrup mixture. If too thick, thin with half and half.

    I actually substituted carrots for the sweet potatoes because I could not run out to the store at the time. It was de-lish! My hubby loved it and looks forward to me using actual sweet potatoes next time. - 7/12/08

    I used yams and OMG its wonderful. As soon as I added the liquid butter to the mix the kitchen had a burst of cinnamon & brown sugar smell. I pre made it for an early thanksgiving can't wait for the reviews. - 11/20/11

    This recipe is ok for a family dinner. It tasted good but I would not serve it to company. They excpect better from me. They know my cooking and they would notice the change. Our freinds and family thinks I am a geat cook - 11/2/08
