Ingredients

1 package (10 ounces) fresh or frozen chopped spinach
1 cup (4 ounces) shredded part-skim mozzarella cheese
1 cup (8 ounces) 2% cottage cheese
3/4 cup grated Parmesan cheese, divided
1 egg, lightly beaten
10 lasagna noodles, cooked and drained
2 jars (15 ounces each) pasta sauce
Directions
In a small bowl, combine the spinach, mozzarella, cottage cheese, 1/2 cup Parmesan cheese and egg. Spread a heaping 1/3 cupful over each noodle. Roll up and secure with toothpicks.
Place seam side down in an 11-in. x 7-in. x 2-in. baking dish coated with cooking spray. Cover and refrigerate overnight.
Remove from the refrigerator 30 minutes before baking. Pour tomato sauce over roll-ups. Cover and bake at 350° for 33-38 minutes or until bubbly. Sprinkle with remaining Parmesan cheese. Discard toothpicks.
***Option: do not have to make the night before. Turns out just fine when making it one afternoon and baking it that evening for supper.

Delicious and was a big hit in my household. I added some sauteed mushrooms and garlic to the store bought sauce and used whole wheat lasagna noodles. My teenage daughter and her vegetarian best friend devoured it with no complaints. I ended up cutting the noodle in half then filling and rolling. - 11/26/12

I thought this recipe was great! I made 2 boxes of noodles and doubled the filling, and froze the rest of the roll-ups. I also cut the noodles in half because once I rolled them before cutting them it was too thick of pasta, so when you cut them it was perfect and you also get more roll-ups! - 5/7/12

Are lasagna noodles plain old lasagna sheets? Thats what i bought! Found it really time consuming, dont know what i did wrong, but i couldnt cook all the sheets at once because they all stuck together. Had to rush out and buy another pack, then cook each sheet for 5mins each! Tasted good though. - 4/21/10
