Number of Servings: 4

Ingredients

    4-4 ounce boneless, skinless chicken breasts
    1/4 tsp salt
    1/4 tsp black pepper
    2 tsp olive oil
    2 tbsp balsamic vinegar
    1 tbsp honey
    2 tbsp chopped fresh or 2 tsp dried basil

Directions

Sprinkle both sides of chicken with salt and pepper. Heat oil in a large nonstick skillet over medium-high heat. Add chicken; cook 5 minutes or until lightly browned. Turn chicken, and cook 6 minutes or until chicken is done. Stir in vinegar, honey, and basil. Cook 1 minute.

Yield: 4 servings

    This was AMAZING!! I cooked it before I steamed the brocolli and then couldn't stop eating it. It was just about gone before I put the veggie on my plate. Super easy too! - 3/10/12

    I was surprised the chicken didn't have too much of the balsamic flavor. I really liked this recipe for simplicity and as it can be played with to adjust to preferred combinations, i.e. rices, grains, veggies. Thank you! - 8/6/11
