Ingredients

    6 egg whites
    1 cup rolled oats, dry
    1 cup cottage cheese
    2 teaspoons sugar
    1 teaspoon cinnamon
    1 teaspoon vanilla

Directions

In a blender, blend all ingredients until smooth. Heat a griddle or large non-stick skillet over medium-low heat. Spray with non-stick cooking spray. For each pancake pour 1/4 cup of batter onto griddle. Flip when they start to bubble. Cook until golden brown. Repeat with remaining batches, spraying the griddle as needed. Makes about 10 pancakes.

    I'll admit, I was pretty wary of making panckaes with the ingredients listed! :)

    They turned out awsome! They are more of a french toast texture, butwe LOVED them, and for 16 grams of protein and under 200 calories for3 panckes - I am sold !!

    The only tweaking I did was I used a whole egg instead of two eggwhites. I whittled the recipe down to 1/3 of the other ingredients and found these to be the BEST pancakes I've ever had! Thanks for the recipe! I think I shall have them again soon! - 4/8/09

    They laughed when they saw the oatmeal and cottage cheese going into the blender for pancakes... boy, were they surprised when they tasted these flapjacks! These are GREAT! We will definitely make more! - 1/6/09

    This was a great recipe. I love mixing it up in the blender. It took a triple recipe to feed 8 people in our house. My girls love pancakes and I love to know they are getting so much protein and fiber in these! - 8/12/08

    I am addicted to these. I recently found out I am allergic to wheat and this has been a lifesaver. I omitted the sugar cinnamon and vanilla, added chives and flattened them out to make pancake bread wraps. Very good!! - 3/29/13

    What a fantastic way to enjoy pancakes without the wheat flour....this is Zone friendly and love the protein that the cottage cheese added to it! Topped with warmed up berries from our freezer....yum!! Next time we will add a bit more vanilla or cinnamon though. - 8/7/11

    They're more dense than you're regular fluffy pancakes, but they taste good. It is a great way to eat protein if you don't feel like having you're usual eggs for breakfast. - 4/8/09

    These are delicious and so easy to make. I made them just for myself so saved the remaining and popped them into a toaster the next day. I did add lite syrup to mine. Oh, and I only got 7 pancakes rather than 10??? - 7/5/08

    I'm quite sure these taste quite yummy, HOWEVER, how can you call this a low carb recipe!?! Maybe compared to "regular" pancakes, but still, 18g of NET carbs! That is NOT low carb! This would be A THIRD of my daily carb intake! - 4/23/16

    What a great recipe! These were super easy to make, delicious, and fed 3 adults plus 2 toddlers with one batch! To avoid waste, freeze egg yolks in an ice tray or they are good for 3 to 4 days in the refrigerator. From there just look up some easy egg yolk recipes :) - 7/26/14

    Pretty good. I added dark chocolate chips to two of them and that tasted great. I also spread pumpkin butter on one and that was OK. I spread a little almond butter on one and that was better. Next time i"m spreading chocolate PB2 on it to see how that tastes - or i might add it into mix. - 2/18/14

    This recipe has more of a French toast consistency - not that it's a bad thing. I actually made these into muffins - poured the batter in a muffin tin to have something easy to grab and bring to work. Popped them in at 350 for 17 mins, easy to freeze and reheat in the morning. - 5/22/13

    These pancakes not only look great, but they are moist and tasty. They are not overly dense, yet they were filling. I served them with Jimmy Deans turkey sausage patties and we had a great breakfast this morning. I will be making a double batch the next time. - 11/18/12

    This recipie is very simple! I was kind of worried because of the cottage cheese (can sub for plain greek yogurt) but I made them. I was in a hurry so I put it in the microwave for 5 minutes with mushed banana! Also I used 1 truvia for the sugar. When it was done i added sugarfree syrup. Very Tasty! - 8/1/12

    These pancakes were great. Even my 2 and 4 year old boys liked them. Will make these again for sure. I ended up using 3 eggs instead of the 6 egg whites. May need to add some liquid to it next time because my batter was a little thick. - 4/28/12

    These aren't your typical "fluffy" pancakes; they were closer to a french toast texture, but they were great! I added a half of a banana to the batter which added a little extra flavor. I loved how you just blended everything in the blender, it was so easy! - 8/21/10

    made with 3/4 c oats, 1/4 c whole wheat flour, 1 tbs flax, fat free cottage cheese, 1/2 tsp stevia powder, dash nutmeg and clove for holiday flavor, sprinkle chopped nuts and a dried fruit (each person wanted different one lol) on top before turning.
