Introduction

Number of Servings: 4

Ingredients

    1 tbsp balsamic vinegar
    3 tbsp olive oil
    1 tsp Dijon mustard
    2 tsp agave syrup
    salt and fresh ground pepper to taste
    1 cup fresh baby spinach
    1 cup sliced strawberries
    1/3 cup slivered almonds, lightly toasted

Directions

Makes 4 generous servings

Combine the first 5 ingredients in a salad bowl. Add the spinach, strawberries and almonds and toss to coat well. Divide the salad into four equal salad bowls and serve.

Note. To toast the almonds, place them in a single layer in a small baking pan. Bake in a 300 degree oven for 10 minutes, or until lightly toasted.

    This is so incredibly delicious. My husband even loved it (a miracle since he is a picky eater). I did double the amount of spinach; there certainly was enough dressing to cover everything. Totally awesome and simple recipe!!! - 6/1/09

    Brought this to our ladies night gathering and everyone loved it. I used one full bag of spinach instead of the 1 cup, substituted 1/2 t. sugar for the agave syrup, and used one full carton of strawberries (because I love them!). Normally don't like balsamic, but this dressing definitely works! - 4/3/11

    I eat this spinach salad all summer. I use 2 packed cups of spinach and replace the agave with small amount of stevia. I also use pecans or walnuts depending on what I have in the house. - 9/8/10

    Another way to toast almonds is in a pan on a stove top burner. Simply heat the almonds while stirring them until they are toasted to your liking. Do not leave them unattended! They toast quickly!
