Ingredients

* Watermelon, 0.25 melon (15" long x 7-1/2" dia)
* Feta Cheese, 280 grams/10 oz
* Pine Nuts, 1.5 oz
* Lemon Juice, 1 lemon yields
* Olive Oil, 3 tbsp
* Peppermint, fresh, 10 tbsp
* Salt, 1 dash
* Pepper, black, 1 dash
Directions
Cube the watermelon and place in large salad bowl. Crumble the feta cheese on top. Roast the pine nuts until lightly browned and fragrant. Chop the fresh mint leaves and make a dressing from lemon juice (not necessarily the juice of the whole lemon, according to taste), black pepper, salt and the olive oil. Sprinkle pine nuts, mint leaves and dressing over the salad and toss lightly.
Serve with french bread or flat bread. Serves 6 as a main dish (with bread) or 8-10 as an appetizer or side dish).

Made this one for Salad day at the office. We added cucumber and pumpkin seeds, and used edam cheese instead of feta, didn't want to overpower the delicate taste of the watermelon. We also made a mint dressing rather than using straight mint leaves. we had 4 raves and 1 so so from the attendees. - 6/5/08
