Introduction

The original recipe sent to me was for 2 whole eggs and 1/4 cup butter or oil. I substituted 4 egg whites and 1/4 cup of unsweetened applesauce. My kids ate them and thought they were great. Ingredients

    2 Cups whole wheat flour
    2 Tbsp. Sugar
    3 tsp. Baking Powder
    1 tsp. salt
    1 tsp Cinnamon
    4 Egg Whites
    1 1/4 Cup Nonfat Milk
    1/4 Cup Unsweetened Applesauce
    1 tsp. Vanilla

Directions

Combine all dry ingredients together in a mixing bowl. Combine all wet ingredients in a seperate bowl and mix well. Add the wet ingredients to the dry ingredients and fold together. Do not overbeat or they will be tough. Put 1/4 cup of batter per waffle (I have a small 2 square waffle maker and that was perfect may have to adjust)

    These waffles are VERY
    good! I have a 4 square waffle maker, and one recipe of this made 17 squares, so I calculated the calories at about 63 cal/square. I used egg substitue instead of the whites, and I used 1/2 white flour. They had a wonderful flavor!! Everyone loved them.

    This fits in well with my growing interest in using whole wheat more and in substituting applesauce for oil.Our round 6" diameter waffle iron made 5 1/2 waffles @ 171 cal/waffle serv. Thanks! I am looking for recipes along these lines. - 2/27/11

    Good
    I used oat flour, 2 large eggs and it made 4 large waffles.
    It turned out very dry. I think next time I will put half flour white and maybe 1/2 cup of apple sauce.
    Anybody else have some suggestions?
