This is one of my favourite dinners - quick, wholesome and vegetarian. Easy to scale up for if you're feeding more than one person, too!

Ingredients

    1 tbsp olive oil
    1 courgette, grated
    2 cloves of garlic, finely chopped
    1 tsp chili powder or chili flakes (or less if you don't like it so spicy)
    2 tbsps grated Parmesan
    200g cooked pasta
    salt and pepper, to taste

Directions

Makes one serving.

All this can be done while you cook the pasta. Nice and easy!

Pour the olive oil into a frying pan and heat gently. Add the garlic and fry for a minute or two on its own. Then add the courgette and chilli. Cook gently for five minutes or so - till it starts to soften. Then turn down the heat and add the Parmesan, and stir for a moment while the cheese melts into the courgette. Season to taste, and serve with freshly cooked pasta.

    I shaved the zucchini with a peeler rather than grating it, and I added the raw squash to the hot pasta. It doesn't need to be cooked at all. - 2/26/19
