Ingredients

    4 lb Beef, brisket, trimmed
    2 tbsp Olive Oil
    3 large Onions, raw
    3 clove Garlic ( minced)
    3 stalk, large Celery, raw
    3 large Carrots, raw
    4 medium Potato, raw
    1 head, small Cabbage, cut
    1 T, crumbled Bay Leaf
    2-3 cup Beef stock, home-prepared
    1 T Mustard

Directions

1. The day beforeyou want it for dinner... trim fat off of brisket, boil in enough water to cover for 2 hours. Refrigerate
2. Preheat over to 300
3. put olive oil in pan and brown brisket on all sides (set aside)
4. add garlic & onion to pan , cooked until brown.
5. put brisket in baking dish (dutch oven) and add all ingredients, cover
6. Bake for 4 hours turning brisket every hour (add water if needed)
7. if desired, make gravy from stock. Serve (cut brisket against the grain)
