Ingredients

    Zucchini, 2 cup, sliced (remove)
    Parmesan Cheese, grated, 2 tbsp (remove)
    *Progresso Bread Crumbs - Italian Style, .5 cup (remove)
    egg white, fresh, 1 large (remove)
    Milk, 1%, 1 fl oz (remove

Directions

preheat oven to 400'
spray cookie sheet with canola spray
Mix dry ingredients in a flat pan or dish
mix milk and egg white in another dish
slice zucchini
dredge in milk then breadcrumb mix
spray top of zucchini
bake until brown and crispy turning once

serving size -1/2 cup

    I make this all the time although I've never mixed milk with teh egg, I'll have to try that. It's excellent with a little light mayo mixed with a squirt of lemon juice, salt, and garlic pepper for a dip! - 8/12/08
