Introduction

Very yummy, but nutritionally empty! Very yummy, but nutritionally empty!

Ingredients

    1 small package chocolate cook & serve pie filling (I use Jell-o)
    1/4 cup light vanilla soy milk (I use 8th Continent)
    2 tbsp margarine (I use ICBINB Original)
    1.5 cups powdered maltitol (I use Steel's Nature Sweet.)

Directions

In a medium saucepan, combine pudding, soy milk, and margarine. Cook over low heat, stirring constantly, until you are left with a big uniform non-stick type of consistency throughout.


Remove from heat and quickly stir in the sugar substitute until it is once again uniform. It will seem like an impossible task, but have faith and keep stirring!


Spread into a small, lightly sprayed storage container, refrigerate, then cut into squares. I use a 7 x 5 glass pan very lighty sprayed with butter flavored cooking spray and covered.

Sometimes I scatter a tablespoon of grain sweetened chocolate chips across the top and lightly press them in while the mixture is still warm. That's not included in the nutritional info.


You can readily buy maltitol products over the internet. Look for Steel's and A Bountiful Harvest, among other brands, at places like Netrition and Amazon. Feel free to contact me for recommendations.


I have tried this with Splenda. It does not have enough bulk and the texture is definitely a bit different. I'd call the Splenda version "Desperate for Fudge". If you try it, you might opt to whir the Splenda around in a blender until it is more of a confectioner consistency. I don't know that this would help, so please don't rate me low if you use Splenda and hate it. I don't recommend it.


I have also tried this with regular skim milk. I personally missed the "creaminess" of the vanilla soy, but it was still good! A light chocolate soy might be nice!
