Introduction

Ingredients

    1 medium banana, thinly sliced
    1/4 cup of complete buttermilk pancake mix (the kind that you only need to add water too)
    slightly less than 1/4 cup of water (you may need to adjust this a bit, depending on the instructions for the brand of pancake mix you use)

Directions

Cover bottom of a small Teflon frying pan with banana slices (some may overlap, and that's okay). Turn heat to medium. Meanwhile, mix pancake mix and water together. After the pan has heated up (should only take about a minute), pour pancake mix over banana slices. This is just like making a giant pancake. When the edges start to look done, and the top is bubbly, flip it over. Cook until lightly browned on both sides. It may fall apart when you flip it, but that's okay. It's sweet enough with all of the banana that you can eat it plain, or you could top it with syrup or jam if you like.

    OMG very good. Just got done making them and r eating them as we speak. Definitely added choc. chips on top and I made 2 recipes of them. The first one I did just like it said, put the banana in pan, fell apart when i flipped. added to mix. worked much better. will make again and again and again.... - 6/11/11

    This is delicious. I've been doing this for years. The only thing I do differently is I add the pancake mix first and then add mashed banana to the uncooked side. It hold together great when you are flipping it. Add a little cinnamon or even a few mini chocolate chips. Yum! No butter or syrup needed - 1/27/11
