Ingredients

    2 cups flour
    1 1/3 cups rolled oats
    1 teaspoon baking soda
    3/4 teaspoon salt
    1 tsp cinnamon
    1/2 teaspoon nutmeg
    1 2/3 cups sugar
    2/3 cup canola oil
    2 tablespoons brown sugar
    1 cup canned pumpkin, or cooked pureed pumpkin
    1 teaspoon vanilla
    3/4 cup vegan chocolate chips

Directions

Preheat oven to 350. Grease or line two baking sheets, set aside.

In a medium bowl, combine flour, oats, baking soda, salt, cinnamon and nutmeg. Set aside.

In a large bowl, combine sugars, oil, pumpkin and vanilla. Add dry ingredients in batches, folding to combine. Add the chocolate chips, folding to combine.

Drop batter by spoonfuls onto cookie sheets about one inch apart. Bake for 15 minutes, longer if you want a firmer cookie. Let cool on a wire rack or plate in a single layer.

Makes 32 servings, one cookie per serving.

    Very good, always use applesauce or prunes in place of most oils. Part ww flour as well. Splenda & added raisins this time. - 7/7/11

    Very good! Used 1/3c unsweetened applesauce and 1/3c oil instead of 2/3c oil. My 19yr old daughter came home from college tonight and grabbed one, then another, then another... big hit! Thanks for sharing. - 2/4/11

    I didn't have chocolate chips but made half of them without (adding 2 TBSP of flour extra) and half with finely chopped walnuts). They are the moistest, yummiest cookies I have had in a long time. Will try with the applesauce next time to drop the calories a bit more. Wonderful!!! - 11/24/10

    This recipe is amazing! I made a few changes & they still turned out delicious.. subbed 1/3 cup unsweetened apple sauce for 1/3 cup of the oil, used 1 1/2 cups white flour & 1/2 cup whole wheat flour, only used 1 cup of white sugar, and used 2 teaspoons of pumpkin pie spice .. delicious! - 11/27/09
