Number of Servings: 6

Ingredients

    2 tablespoons butter
    1 onion, chopped
    2 stalks celery, chopped
    3 cups chicken broth
    8 cups broccoli florets
    3 tablespoons butter
    3 tablespoons all-purpose flour
    2 cups milk
    ground black pepper to taste

Directions

Melt 2 tablespoons butter in medium sized stock pot, and saute onion and celery until tender.
Add broccoli and broth, cover and simmer for 10 minutes. Puree soup and return to heat.
In small saucepan, over medium-heat melt 3 tablespoons butter, stir in flour and add milk. Stir until thick and bubbly, and add to soup. Season with pepper and serve.

    This soup was delicious! I cut the fat calories down a bit by omitting the butter that was to be used to saute the celery and onion. Instead I cooked them in a bit of the broth. - 4/4/10

    I changed the flour to arrowroot powder and added a quarter cup of Parmesan cheese and it was absolutely to die for. This had a great consistency to it. - 9/22/08

    Finally an honest recipe that has more than a 1/2 cup as a serving, who can only eat a 1/2 cup? I too, cut out the butter, used some broth instead to save calories there so I could top with a little cheddar. :) - 3/19/13
