2 cups unsalted, roasted shelled peanuts
1 tablespoon peanut oil
1/2 teaspoon salt (optional)
Tips
Add sweetener (honey or maple syrup) or spices (cinnamon, ginger, or pumpkin pie spice) to the finished peanut butter.
Directions
1. Place all ingredients in blender or food processor. Blend until desired texture is reached.
2. Place in airtight container and refrigerate unused portion.

I'm definitely trying this one! And as for the comments about it being too high in calories,look at your peanut butter jar! They only count 1 Tablespoon, this one counts 2 as a serving. It's barely any more calories or fat than the jar, and far less sugar! More protein than carbs makes it worth it - 7/17/09

Actually if you care to take the time salted in the shell peanuts can be used without any added oil. Shell them, skin them and blend them, result peanut butter. Simple but a bit messy taste A test you can do is to shell and skin the peanuts then mash some with the back of a spoon and taste. - 2/15/10

I buy fresh peanut butter from my grocery store. They tell me that they do not add anything extra to it. One good thing the fat is healthier than what comes in a jar as the good oil is taken out and something else is put in. I didn't realize it could be done in the blender.
