Introduction
A very healthy version of brownies with a hint of oatmeal and peanut butter and no oil or eggs! Your family will love them and not even realize they have zucchini in them unless they watch you mix them up! Ingredients

1/2 cup applesauce
1 1/4 cup sugar
2 teaspoons of vanilla extract
1 cup oats ground in the blender
1 cup of flour
1 1/2 teaspoons of baking soda
1/2 teaspoon salt
1/2 cup of cocoa powder
2 cups of zucchini, shredded
1/3 cup of peanut butter/chocolate chips
Directions
1. Mix applesauce, sugar and vanilla
2. In a separate bowl mix ground oats, flour, soda, salt, and cocoa until well blended
3. Combine the flour mixture with the applesauce mixture and add the shredded zucchini and chips. Mix well until like a cake batter.
4. Pour in a greased 9x13 pan and bake at 350 for 30 minutes or until middle springs back up.

YUMMY. I made mine a day in advance because that gives the zucchini time to kind of melt away into the rest of the brownies (so you don't see white stringy bits of zucchini), and they turned out moist and yummy! I loved the hint of oat flavor. Will SO make again! Thanks! ETA:make great cookies too! - 2/15/13

I don't understand where to count the peanutbutter. It is not on the full detail of calories nor is it part of the recipie. Is it 1/3 cup of peanutbutter & chocolate mixed or 1/3 cup of each? - 12/11/09

It is 1/3 cup of either peanut butter chips or chocolate chips or a combination of them, but only 1/3 cup total. I usually use a mix.

I really liked these-my family did too! Easy to make, although you have to use a food processor AND a blender besides mixing the ingredients together (lots of dishes to wash!). They tasted yummy, and not healthy at all!
I added 2 T ground flax seed to mine. Plus I had to cook longer-40 mins. - 8/14/08

If you want you can substitute regular flour for the oatmeal flour and eliminate the blender...I just love oatmeal and have started substituting half oatmeal flour in all of my baked goods. I even blend a bunch of it ahead of time.

I personally enjoyed these cupcakes. My family, however did not. My daughter, a brownie affectionado, took one bite and asked "eww, what is this?" For those of us without chocolate in our lives, it is a satisfying way to enjoy some without over indulging. I would make again, but only for me! - 8/5/08
