Introduction

Ingredients

    1 c kimchi with juice, chopped
    1 onion, chopped
    2 T sesame oil
    1.5 T light soy sauce
    1 c brown rice
    2 eggs
    1 cup frozen spinach (thawed)
    chili flakes or paste to taste

Directions

Heat sesame oil over medium heat in pan. Add onion and cook until soft and translucent, about 2 minutes. Add spinach and kimchi and heat through. Turn heat to high. Add rice, soy sauce and eggs and stir frequently. If you like "soft" fried rice, cook just until eggs are set. If you prefer a crispier dish, cook longer.
Serves 4.

    I've tasted this before at my friend's house and it's wonderful if you love Kimchi. If you are concerned about the sodium, I would suggest substituting the soy sauce for a low sodium version and use PAM cooking spray with just 1 TBS of Sesame oil. You sill want the sesame for the flavor...:) - 8/4/08
