Introduction

Ingredients

    4 bacon slices, diced
    2 medium onlins, sliced
    2 medium carrots, sliced
    1 cup sliced celery
    8 oz. package John Morrell Diced Ham
    16 oz. package lentils
    1/2 teaspoon pepper
    1/2 teaspoon thyme
    2 bay leaves
    8 cups hot water
    salt
    2 tablespoons lemon juice

Directions

A quick side-note: I like to put all the veggies in a food processor instead of all the slicing...the kids don't even realize they're eating veggies, and they love the soup. Now, on with the instructions.

1. In 5-quart Dutch oven or large saucepot over medium-hich heat, fry bacon until lightly browned.

2. Add onions, carrots and celery and over medium heat, cook until onions are tender, about 5 minutes.

3. Add ham, lentils, pepper, thyme, bay leaves, hot water and 2 teaspoons salt.

4. Cover, simmer over low heat 1 hour or until lentils are tender. Discard bay leaves.

5. Stir in lemon juice and serve.

    My mother makes this all the time without bacon or ham. I have put turkey kielbasa in it or a hambone to flavor it up! Good soup for a cold winter day. - 4/12/10

    I also added some crushed red pepper seeds and one 15 oz. can diced tomatoes with green chilies and it spiced it up a bit. Omitted ham and it had a great flavor without.
    My first attempt at Lentil Soup but it won't be my last. Thanks for sharing!

    Great recipe. I doubled the recipe and tripled the the celery and carrots for extra veggies. Resulted in 12 nice size bowls for a full meal under 300 kcal each. Nice! I added some hot sauce to my bowl. Delicious. - 6/11/13

    Awesome soup! The lentils stay whole, it's very filling, with lots of fiber. I use smoked sea salt instead of plain, also a good option for vegetarians to get the smoky flavor without the meat. Thanks for a great recipe! - 1/13/13

    What kind of other protein sources works well with this soup other than ham. It's to much sodium in ham for me. Other than that it sounds like a great recepie. Will be cooking it on Wednesday. - 9/4/11

    Incredible!
    I made it but modified it for my tastes, Added Beer in place of 3 cups water and cut ham to 4 oz but added up to 2 smoked Pork Chops with bone and discarded bones and bay leaves after - 11/12/07
