Introduction

Ingredients

    12 vanilla wafers
    8 oz. cream cheese
    1/2 c. sugar
    1 tsp. vanilla
    2 eggs

Directions

Line muffin time with foil liners. Place one wafer in each liner. Mix cream cheese, vanilla, and sugar on medium speed until well blended; add eggs. Mix well. Pour over wafers, filling 3/4 full. Bake for 25 minutes at 325 degrees. Remove from pan when cool. Chill. Top with desired fruit topping and enjoy.

    If you exchange the sugar for splenda, the cream cheese for tofu and the vanilla wafers for 18 graham crackers you end up with an Under 100 Calorie Cheese cake.....Add a couple tablespoons of coco powder and you get a chocolate cheesecake. - 1/26/10

    This is great! I LOVE cheesecake, and this way it is portion controlled and I don't cheat while slicing! I add lots of sliced strawberries on top to get that fruit in. - 8/7/08

    I followed the recipe exactly. I'm not sure what I did wrong, but the vanilla wafers floated to the top while baking. When I took them out of the oven, they looked like poached eggs! In future, I will cut the sugar by a third or half and try graham crackers as others suggested instead of wafers. - 3/30/13
