Ingredients

    4 cups chopped brocoli
    1/2 cup chopped onion (white, yellow or purple)
    1/2 oz or individual box of raisins
    1/4 cup chopped walnuts
    1 oz. sunflower seed kernels
    2 slices cooked, chopped turkey bacon
    3/4 cup Miracle Whip Light (20 cal./Tbsp)
    1/4 cup cider vinegar
    1 Tbsp. granulated sugar
    salt
    pepper

Directions

Clean and chop one or two bunches of brocoli to make about 4 cups, and place in large bowl. Add chopped onion, walnuts, raisins, bacon, and sunflower seeds (the kernels, not whole seeds).

In a separate bowl, mix Miracle Whip, vinegar, sugar, and dash of salt and pepper. When blended, pour over brocoli mixture.

The salad can be served right away, but it's best if it sits in the refrigerator for several hours, or overnight.

    I've made it twice now. I prefer lowfat mayo, but that is a personal choice. I also used packaged crumbled bacon, just as a time saver. My kids like it too, so it's a keeper. - 6/7/10

    When I made this salad, I left out the sunflower seeds and cut out the onions completely and it still tasted great. It was so good that I got my SIL to try some & he won't eat vegetables of any kind and got a "tastes pretty good" rating. - 7/23/09
