Ingredients

    2 C water
    2 C uncooked rice
    16 ozs boneless, skinless chicken breasts (cooked & chopped)
    1 can Healthy Request Cream of Mushroom soup
    1 can Healthy Request Cream of Chicken soup
    1 C 2% milk
    1 16 ozs pkg frozen broccoli (chopped)
    8 ozs Velveeta light (chopped)

Directions

Preheat oven to 350 degrees F.

Cook the rice according to directions on the box (using water in directions)
Boil chicken and chop (this can be done ahead of time so prep doesn't take as long)

Mix all ingredients together. Pour in a greased 9x13 pan and bake for 30-35 minutes (or until heated through and cheese is melted)
Stir halfway through cooking time to help cheese melt evenly.

    It was a little dry. Maybe because I used reduced fat cheddar cheese, but it seemed like there was a little too much rice in it. I also think onions might add a little flavor. - 4/1/11

    I used cheddar cheese and 2 cans of cream of mushroom since I had them already. Didnt add all the milk and added onions since I have had it before with onions. Glad I forgot to add the broccoli. Like my broccoli crunchy. :) - 5/16/10

    I made this recipe for a church pot luck and it went very well, I couple of things that I did change was that I browned the chicken in olive oil and added poultry seasoning and also onions to it. Next time I will also add more cheese to it. I will make it again. Thanks for submitting it. - 2/8/09
