Ingredients

    6 oz whole wheat pasta shapes, such as shells
    2 Italian sausage links, removed from casings
    2 cloves garlic, chopped
    9 oz baby spinach
    15-oz can no salt added diced tomatoes, drained
    4 tb grated Parmesan or Pecorino cheese
    Salt and pepper to taste
    1 tb olive oil

Directions

Cook pasta until tender.

In a large nonstick skillet, cook sausage over medium-high heat, breaking up with a wooden spoon, until cooked through, about 5 minutes. Stir in garlic, spinach, and tomatoes. Cook, stirring often, until spinach wilts and tomatoes begin to break down, about 3 minutes. Remove from heat, cover, and keep warm.

When the pasta is cooked, drain and return to the hot pot with a bit of the cooking water. Stir in the sausage and spinach mixture. Add the cheese, olive oil, and salt and pepper, combining thoroughly. Serve in pasta bowls with extra cheese for those who wish it.

    This was good...the sauce, taste etc...but my family are not spinach fans and I thought this might not make a difference but it did....If you don't like spinach, don't make this...that is totally my fault...not the recipes!! - 2/17/08
