Ingredients

    1 chopped onion
    1 chopped bell pepper, green
    3 cloved of garlic, chopped
    1 cup long-grain Brown Rice
    1 tbsp chili powder
    2 tsp ground thyme
    2 cups canned tomatoes, crushed or diced
    1 cup chicken broth
    salt and pepper to taste
    1 can (15 oz) red kidney beans

Directions

In a meduim saucepan cook onions, garlic, bell pepper in a few tsps olive oil until they are soft. Add the rice and chili powder, stir. Add the tyme, tomatoes and broth, stir, add salt and pepper to taste. Bring to a boil. Reduce heat to low and cover. Simmer until the rice is tender, time varies depending on the rice, 15-20 min. Stir in Kidney Beans, heat another 5 min. Stir and serve.

    Reduced the thyme, subbed in Tony Chacheres for the chili powder and increased garlic to four cloves. I used a red pepper since I didn't have a green one. Wife and I enjoy as a go to dinner, want to try adding andouille sausage. - 11/13/12

    I used instant brown rice, 3 c. chopped fresh tomatoes, and creole seasoning (instead of chili powder), homemade beef stock, and added ground mustard seed.I browned the rice in oil, and added everything but the beans to cook. I put in the beans at the end just to heat. Good w/ cheese or meat on top - 8/20/12

    Had no tomatoes, so I used a can of Progresso Hearty Tomato soup, and I precooked the rice in my rice cooker to make the dish easier. Also, I had my own cooked beans from dried, so no sodium from the beans! AWESOMELY tasty! - 6/3/11

    I love love love this recipe. The only thing I changed is I use colored bell peppers (usually red) because I like them better and the green ones upset my husband's stomach. I love it by itself or as a side. So yummy. - 8/20/10

    I love this recipe actually I thought I created it myself. I have been making it for a long time. I tend to make my own concoctions, and never measure, just add. in fact tonight I made this with sauteeing red onion, red pepper, mixed vegatables, small amout of extra virgin olive oil - 1/25/10

    We loved this receipe. I cooked and seasoned heavily 8 oz of lean ground beef with thyme, cayenne pepper, oregano, & garlic granualted. No Salt. Used Instant brown rice and added 1 cup more water added meat with the rice. After cooked let sit for over 1 hour on very low burner. - 9/7/13
