Introduction

Green beans and onions are lightly sautéed in only one tablespoon of oil. Green beans and onions are lightly sautéed in only one tablespoon of oil.
Number of Servings: 1

Ingredients

    1 lb. fresh or frozen green beans, cut in 1-inch pieces
    1 tablespoon olive oil
    1 large yellow onion, halved lengthwise and thinly sliced
    1/2 teaspoon salt
    1/8 teaspoon black pepper
    1 tablespoon fresh parsley, minced

Directions

1. If using fresh green beans, cook green beans in boiling water for 10-12 minutes or steam for 2-3 minutes until barely fork tender. Drain well. If using frozen green beans, thaw first.

2. Heat oil in a large skillet. Sauté onion until golden.

3. Stir in green beans, salt and pepper. Heat through.

4. Toss with parsley before serving.

Yield: 4 servings--Serving Size: 3/4 cup

    My only problem with this recipe is the 12 minute boiling time suggested. If placed in rapidly boiling water, 7 minutes works every time for a cooked but firm bean. - 10/17/09

    I simply love this recipe! I love fresh green beans but could never think of anything to do with the other than boiling them,,,bland...yuck. But saute'ing these beans with the olive oil and salt/pepper brings out such great flavor in them. I just leave out the onions since I am allergic to them. - 3/16/07

    So easy but so delicious! This was the hit of our Sunday Ham Dinner! I particially cooked beans from frozen until just about thawed while I cooked onion in olive oil.     How can you go wrong with grilled onions? You can't. I like green beans anyway, so adding grilled onions is like gilding the lily. However, I didn't think it was a great mix. It was ok, but I don't think they complement each other as much as I imagined. - 2/7/11

    I made this tonight. I used onions and garlic and a little soy sauce. I didn't care for the texture of the beans ( I blanched them for 12 minutes), and I wish I had left them longer in length instead of cutting them up like the recipe calls for.     Our favprite is fresh green beans with just garlic. I can buy them just 5 mins. away at a farm stand because they take up too much of my limited garden space to grow. Depending on my preference at the time, I have used one or more of the following (with or in place of the onions or parsley): garlic, mushrooms, sliced almonds, sesame seeds, grated parmesan cheese, or sesame oil (in place of olive oil). - 10/17/09
