Ingredients

    1/2 Cup carrots, cut into 1/4-inch julienne slices 1/2 Pound TURKEY TENDERLOINS 2 Green onions, sliced 2 Slices red or green pepper 1 Tablespoon fresh lime juice 1/4 Teaspoon dried cilantro 1/8 Teaspoon cumin 1/8 Teaspoon dried oregano 1/8 Teaspoon chili powder 1/4 Teaspoon garlic powder

Directions

1. On a 12-X 16-inch foil rectangle, place carrots and top with tenderloin. Arrange onions and pepper over tenderloin.

2. In a small bowl combine lime juice, cilantro, cumin, oregano, chili powder and garlic powder.

3. Fold edges of foil up to form a bowl shape. Pour lime juice mixture over tenderloins. Bring two opposite foil sides together above food; fold edges over and down to lock fold. Fold short ends up and over. 5. On a small cookie sheet, place foil bundle and bake at 400 degrees F. 20 to 25 minutes or until meat reaches 170 degrees F. Check for doneness by opening foil bundle carefully to insert meat thermometer in thickest part of meat.

Makes 2 servings (approx 4 oz turkey per serving.)

    I healthy sauted this in 2 TBSP of water in a skillet on the stove top. It was flavorful and moist--and i was able to eliminate using foil which i don't use in my household. - 5/13/08

    Thanks to mikebesurfing for the salt analasance.I'll be making this and know I'll enjoy it wrapped in a whole wheat tortillas.I just have to say that I don't see how anyone could look at this recipe and think there is so much salt.Think folks....Chef Jim - 5/13/08

    Some Turkey with your Salt.... Actually it's a typo it only has 70mg according to there website.

    As Technologist points out the sodium is high. I would check where the soldium is and eliminate that ingredient. I feel that it might be in the garlic powder and I would sub fresh garlic as it is what it keep in my house. I have no garlic powder on hand - 5/13/08
