Ingredients

    1 can of Chicken Broth
    1/2 head of Cabbage - chopped
    3 large carrots - chopped
    8 stalks of celery
    1 onion chopped
    1 cup of green peppers chopped (approx 2 large)
    1 can chopped tomatoes
    1 can of sliced mushrooms
    1 pkg of lipton onion soup mix
    12 oz can of v-8 juice
    .

Directions

Chop all veggies into bite size pieces. Drain and rinse canned mushrooms. Add all ingredients in a large crock pot - cook on high for two hours and then on low for 3 hours. Very filling. Makes 10 servings of 1 cups. very low calorie.

    I made this soup for my husband and I for the day after our birthdays dinner. Love it. The only thing i did differently is omitted the mushrooms blah....and used a can of tomatoes with green chilies instead of just plan tomatoes. Thanks it was fantastic. Keeping this recipe. - 2/19/09

    WE LOVE THIS SOUP!!! Changes we made: Omitted mushrooms and peppers (allergic). Used 4 cups reduced sodium chicken broth, a WHOLE head of cabbage, a large can (32 oz.) diced tomatoes, and added a tsp of Worcestershire sauce and some ground black pepper at the end. Guilt free yumminess! - 11/9/08

    Not bad, great way to get in a lot of veggies. I had to add some garlic powder and some fresh thyme to bump the flavor up a bit. I also used fresh mushrooms as I'm not fond of the canned type. One caveat, I did make this stovetop and not slow-cooked, so it may have contributed to lack of flavor. - 3/15/09

    Really good!! I added 2 extra cups of low-sodium chicken broth instead of the onion soup mix and the broth was soo rich in flavour. It's loaded with veggies and is super filling. My kids even liked it! - 11/2/08

    wonderful soup, even my kids ate it. Did exchange beef broth for chicken, added a large onion chopped fine. Accidentally left out the green peppers. Took longer to get the cabbage soft tho, had to inc to high for 3 hours after first five. Still great! - 11/14/08

    In a word...AWESOME! We loved it. I left the mushrooms out though; my family does not care for mushrooms. I also substituted vegetable broth instead of chicken broth; it makes a total vegetarian soup. It's a great, low-calorie meal! - 1/3/12

    I needed it to be a more of a meal so I added some chicken, as well as brown rice. And changed the V8 to the left over home aid hot sauce. It turned out wonderful. Thanks for sharing. - 11/5/08

    good basic recipe for beginners. u can play with it by adding/deleting what u like/dont like. try adding some wine,
    half & half (milk), balsamic vinegar, to yer broths for variety. also, its good to tinker with more or less of everyones suggested ingredients to find yer favorite batch.

    Excellent base soup. Subbed yellow pepper for green, crushed tom for V8, water for broth & omitted mushrooms. Made exactly 10 generous very filling cups. Will find a sub for the soup mix as it alone adds over 500gr sodium per serving by my calculations. - 2/9/11

    made this today and eating it right now as a nice snack....great on a cold, rainy day. I left out the green peppers and celery as I didn't have any but doubled up on the cabbage as I had 2 heads sitting around too long in the fridge. Also threw in a handful of TVP for no-fat protein and satiety. - 1/20/11

    Mmmm, delicious! I like that there wasn't too much liquid, reminded me of beef stew! I added 2 cloves garlic, 1/2 tsp cayenne pepper, and 1/2 tsp red chili peppers for a nice spice. perfect! - 12/1/10

    Very good recipe, I used a can of diced tomatos with chilies instead of the can in this recipe, and omitted the mushrooms since my hubby wont eat them. The chili's gave this soup the perfect little kick! I also added 3 cups of water for more soup and got 14 1c servings of very filling soup - 6/24/10

    This is a good soup if you like cooked veggies. If you are planning to freeze this soup, leave out the mushrooms since they don't freeze well and are not very appetizing when defrosted. I may try this again with chicken broth instead of onion soup mix. - 2/22/10

    Very good for a cold day. I did not add green peppers, didn't have them on hand. Instead of the lipton soup mix I sauted two onions and added chicken boullion cubes. I also added some fresh basil. The soup was wonderful. - 1/11/10

    I totally changed up parts of this recipe based on what I had and other suggestions and still very good. Used 4 c of low-sodium chicken broth instead of onion soup mix (and other broth). Used 20 oz spicy hot v-8 juice and only 4 stalks of celery. Next time I will omit the green pepper/mushrooms. - 8/9/09
