Ingredients

2 cups cooked spaghetti squash
2 lbs browned ground beef (lean)
2 cups spaghetti sauce
3 cups cottage cheese
1 cup shredded cheddar cheese
Directions
place cooked spaghetti sqaush strands in casserole dish layer each remaining ingredient in dish sprinkle cheese on top and place in oven for 5-10 minutes until cheese is melted and lasagna is hot all the way through. This makes 12 servings in a 9x13 casserole dish
NOTE:
To quickly and easily cook spaghetti squash cut in half long way remove seeds add 2 TBS water to the seed cavity cover the squash with cling wrap and microwave for 8-10 minutes. Let set for 2 minutes take a for and pull down the insides of the squash. The flesh will come off in spaghetti like strands.

This was a great recipe! Just a couple of suggestions - I cook spaghetti squash by cutting it length wise and placing in a shallow pan with a couple inches of water (enough to steam). Also, I sauteed spinach and added it to ricotta cheese. It was a big hit in my house and I will make again! - 8/22/11

I thought I'd died and gone to heaven! I never knew eating healthy could taste so good and I didn't even miss the pasta. I drained the squash on a paper towel for a while and also drained the cottage cheese in a coffee filter for at least an hour. Used Mexican 4 cheese blend, this was amazing! - 6/21/12

I made this and people loved it I didn't use beef, used ground turkey, however and substituted cottage cheese for low fat ricotta. Added some mushrooms green peppers, and onions, with the meat. Some Italian seasoning, and it tasted great. I'm not a huge fan of reheating it though I will say that. - 7/5/10

Wow, spaghetti squash is a great pasta substitute, yum! I made my own tomato sauce with lots of veggies (see my food tracker for ingredients) and added mozzarella and paremesan as well as cheddar. What a treat!!!! - 10/6/08
