Ingredients

    2 cups cooked spaghetti squash
    2 lbs browned ground beef (lean)
    2 cups spaghetti sauce
    3 cups cottage cheese
    1 cup shredded cheddar cheese



Directions

place cooked spaghetti sqaush strands in casserole dish layer each remaining ingredient in dish sprinkle cheese on top and place in oven for 5-10 minutes until cheese is melted and lasagna is hot all the way through. This makes 12 servings in a 9x13 casserole dish
NOTE:
To quickly and easily cook spaghetti squash cut in half long way remove seeds add 2 TBS water to the seed cavity cover the squash with cling wrap and microwave for 8-10 minutes. Let set for 2 minutes take a for and pull down the insides of the squash. The flesh will come off in spaghetti like strands.

    This was fantastic! I have never had spaghetti squash, but I am impressed how great this meal is. The only thing I chnaged was I added fresh mushrooms, onion, and green pepper to the hamburger, and I used light mozzarella instead. Delicious!! :D - 9/30/09

    Try spreading the shredded spaghetti squash on paper towels to drain off juices. Also use a slotted spoon to scoop up the cottage cheese to allow juices to drain off.

    My family doesn't like cottage cheese so I substituted fat free ricotta for cottage. I also added frozen spinach to the ricotta - thaw, squeeze out excess liquid, mix with the ricotta and 1/4 cup egg beaters. This is great! This squash is a great alternative to pasta for a change. - 10/12/10

    I thought this was a great alternative to traditional lasagna. I made mine meatless and used low fat mozzarella, added garlic granules, italian seasoning, and pepper. I honestly didn't miss the meat but will have to add it in future meals, will definitely make again, thanks for sharing! - 6/24/09

    This was a great recipe! Just a couple of suggestions - I cook spaghetti squash by cutting it length wise and placing in a shallow pan with a couple inches of water (enough to steam). Also, I sauteed spinach and added it to ricotta cheese. It was a big hit in my house and I will make again! - 8/22/11

    I found the cottage cheese kind of icky and unfortuently i think there needs to be a step in the instructions for straining the spaghetti squash there was a lot of liquid in the bottom of my lasagna. if i tried again i would definitly use fat free ricotta instead. - 10/27/09

    Awesome recipe. I modified it somewhat. I used ground chicken and seasoned it while it cooked. I also added some seasoning to the spaghetti squash and cottage cheese and made my own tomato sauce. The spaghetti squash is a great substitute for pasta...yum! - 1/8/09

    I thought I'd died and gone to heaven! I never knew eating healthy could taste so good and I didn't even miss the pasta. I drained the squash on a paper towel for a while and also drained the cottage cheese in a coffee filter for at least an hour. Used Mexican 4 cheese blend, this was amazing! - 6/21/12

    I made this and people loved it I didn't use beef, used ground turkey, however and substituted cottage cheese for low fat ricotta. Added some mushrooms green peppers, and onions, with the meat. Some Italian seasoning, and it tasted great. I'm not a huge fan of reheating it though I will say that. - 7/5/10

    I made this lastnight although the flovor was good, I couldnt get use to the texture of the spegetti squash. Ive never had spegetti squash in my life so it could simply be that. Those who have had spegetti squash before should thoroughly enjoy this recipe. - 2/1/09

    I loved this but it was a 50/50 in my household. My son loved it but my picky eaters (daughter and husband) picked out the squash. I skipped the cottage cheese altogether cause they don't like it. I would eat it every week...if you like squash this is really tasty! - 10/27/08

    Wow, spaghetti squash is a great pasta substitute, yum! I made my own tomato sauce with lots of veggies (see my food tracker for ingredients) and added mozzarella and paremesan as well as cheddar. What a treat!!!! - 10/6/08
